Quick & Easy Breakfast Recipes From The Skinny Confidential & GIVEAWAY!

I’m SO SO excited to share this post with you today. When I received an email a few weeks ago asking me to be a part of the virtual book tour for Lauryn Evarts’s book, The Skinny Confidential: A Babe’s Sexy, Sassy Fitness and Lifestyle Guide, I couldn’t respond “YES” fast enough. Once I stopped doing my happy dance long enough to pick my jaw up off the floor, I immediately pulled her book off my shelf (I bought it last March when it came out) and started brainstorming what part of her book I wanted to share with you here on my little corner of the blogosphere.

In her book, Lauryn shares all of her fitness and lifestyle tips in a conversational way that feels like sitting down for a cup of tea with your best friend. She doesn’t preach a bunch of crazy concoctions or lists of things you CAN’T do, but focuses instead on making simple lifestyle changes that can last a lifetime. She also emphasizes the concept of “faking it until you make it,” which is so refreshing in a world that values perfection.

Can you tell that I’m a little obsessed with this book?!? I may have went a little overboard with the sticky flags marking all the things I liked as I was reading her book!

So since I’m always on the lookout for quick, easy and healthy breakfast ideas, I thought I’d share two delicious options from Lauryn’s book. First up is this delicious looking fruit salad.

A Sex Kitten’s Salad

SERVES: 1

1 handful of strawberries, sliced
1 handful of blueberries
4 hefty pineapple wedges, chopped
1 kiwi, skinned and diced
4 tbsp/30 g Greek yogurt
2 tbsp/20 g chia seeds
Cinnamon, to taste
Pumpkin pie spice, to taste
Nutmeg, to taste
Optional: fresh mint leaves

+ Combine all ingredients in a large bowl and toss lightly. Add extra spices on top. Garnish with mint (optional).

Now sticking with Lauryn’s “fake it until you make it” motto, I decided to cheat a little when I made this recipe by using some precut fruit from the grocery store since I mutilate kiwis when I skin them. This “cooking hack” made an already easy to create recipe even easier. SCORE!

My finished breakfast salad was absolutely delicious, even though I think I may have added a little more yogurt than the recipe called for. Whoops. Oh well… moving on… I loved the extra flavor the cinnamon, nutmeg and pumpkin pie spice added to the mix. Paring fruit and yogurt is a breakfast staple for me, but never would have thought of adding seasonings to it for a little something extra.

Now for all you pancake lovers, check out these healthy two-ingredient pancakes!

Two-Ingredient Pancakes

SERVES: 1-2

½ cup/120 g ripe banana, very mashed
2 eggs
1 heaping tbsp/10 g flaxseed (optional)
Coconut oil cooking spray
Optional: pumpkin spice, cinnamon, berries and a few squeezes of lemon juice

+ Mix banana and eggs in a bowl. Add 1 heaping tbsp/10 g of flaxseed if you want your pancakes to really hold together well. Heat a skillet to medium heat and spray with coconut oil cooking spray. Scoop a bit of batter (think the size of a tennis ball for one pancake) onto the skillet. Cook until the edges are dry. You want your pancake thin. Flip. Cook till golden brown. Goal: 4 to 6 pancakes. I like to add about 3 dashes of pumpkin pie spice. Garnish with a dash of cinnamon, a few berries and a squeeze of lemon.

NOTE: If you’re pressed for time, use a blender to mix ingredients.

I love how few ingredients this recipe required and how easy the “batter” was to make. At first, I wasn’t sure the pancakes would actually stick together because of how few ingredients were in them, but they turned out perfectly! I love the natural sweetness the bananas add to the pancakes because then I’m not tempted to drown them in syrup! Also, anything that incorporates mixed berries is all good in my book!

    • I’m glad I’m not the only one! Both recipes were so simple, but added so much more flavor or made it healthier than the versions I usually make. I loved them! Let me know what you think when you try them!

      • I had some slight mishaps while making it. By that, I mean…chili powder instead of cinnamon (the two containers look exactly the same, they’re the same color, both start with “c”…), and not being able to flip it prettily…

        (There’s a reason I never make pancakes, hahaha.)

        But it tasted super good! :D! I will likely be sharing it on Foodie Friday somewhere next month! :]
