3 Ingredient Pumpkin Spice Chocolate Chip Muffins

Hello!

I wanted to share a quick and easy festive recipe that my mom and I whipped up last night for a quick treat. I love to cook and bake, but hate long complicated recipes that have a ton of ingredients. This recipe only requires 3 ingredients and only takes a few minutes to prepare. WIN!

Ingredients:

  • 1 cake mix (We used a spice cake mix this time, but I’ve done it with a normal yellow cake mix and added cinnamon and nutmeg before and like it that way better.)
  • 1 16oz can of pumpkin puree
  • 1 cup chocolate chips

Preheat your oven to 350 degrees and then all you have to do is mix all the ingredients together with an electric mixer and then fold in the chocolate chips with a spoon. Easy peasy!

Use a cookie scoop to place your mixture in muffin cups. You could even use spooky Halloween muffin cups to take these to a Halloween party. 🙂

Place them in the oven for between 15 to 20 minutes, then let them cool off on a cookie rack and you’re done. BAM!

I had a little pumpkin puree left over so I decided to give it to the puppies and they loved it! Yes, they are eating pumpkin off of Menchie’s spoons, just in case you were wondering! 🙂
